STERLING CAVIAR is the oldest white sturgeon aquafarm and largest caviar producer in the United States. We are currently looking for a Processing/Plant Manager to oversee the meat and caviar processing activities at our Elverta, CA farm. The right candidate will have experience in the seafood industry and considered to be a stellar individual with management know-how! ESSENTIAL DUTIES AND RESPONSIBILITIES: • Plan, organize, direct and run optimum day-to-day operations to exceed our customers’ expectations • Increase production, assets capacity and flexibility while minimizing unnecessary costs and maintaining current quality standards • Oversee ongoing R&D and collaborate with Product/QA Manager on quality control projects to improve caviar processing quality, aging, proper storage and shelf-life • Develop and implement HACCP and sanitation control plans/protocols; enforce HACCP and sanitation control protocol all staff • Provide adequate training to all workers (seasonal and full-time) to ensure caviar production is processed with high degree to quality • Implement strategies in alignment with strategic initiatives and provide a clear sense of direction and focus • Analyze data and create reports to present to executives regarding processes, inventory, usage, etc. • Monitor processing operations and trigger corrective actions immediately • Maintain caviar paperwork, fish data sheets, building of bar codes, and caviar production sheets and provide to Executive staff on an on-going basis • Enforce the security of the physical inventory of caviar and meat products such as temperature logs, burglar alarms, security coeds, refrigeration locks, etc. • Prepare and follow through domestic and international caviar shipments and inventory protocols • Collect and analyze meat harvest/caviar processing data to find places of waste or overtime; be prepared to report on analysis • Work with all departments and make recommendations to ensure efficient operations for the Processing department • Develop systems and processes that track and optimize productivity and standards, metrics and performance targets to ensure effective return on assets • Responsible for processing fish, packing shipments, and delivery of shipments to airport • Manage and oversee the development of all hygiene sampling schedules • Responsible for taking, sending, and tracking all lab results • Ensure all proper sanitation and hygiene protocols are met amongst the Processing staff • Oversee work schedules to ensure coverage • Perform routine safety checks on equipment • Take ongoing inventory of supplies and place orders when necessary • Stay up to date with latest production management best practices and concepts QUALIFICATIONS & SKILLS: • Proven experience as a Plan/Processing Manager • Adequate knowledge of business and management principles (budgeting, strategic planning, resource allocation and human resources) • Familiarity with industry standard equipment and technical expertise • Knowledgeable of safety, quality, productivity, demand creation, inventory and stewardship processes • BS degree in Business Management or related field • 5+ years in a sanitation or lead role, preferably at a food manufacturing facility • Knowledge of HACCP, chemicals, pesticides, SSOP, and master sanitation in a food environment • Proficient computer skills, including Microsoft Office, Word, Excel, and the ability to learn new platforms • Ability to create accountability and to lead by example • Good written and oral communication skills; strong follow-through skills • Excellent interpersonal skills; high degree of honesty and integrity • Highly self-motivated and directed • Keen attention to detail • Proven analytical and problem solving abilities • Ability to effectively prioritize and execute tasks • Experience working in a team oriented, collaborative environment • Must be able to lift up to 50 lbs. • Must have previous cutting experience • Must be able to stand for long periods of time • Must be able to work in a refrigerated environment We have a competitive starting pay, and you will work with an amazing team who truly look out for each other. All the White Sturgeon fish we process/sell have been raised on our farm! We’re based in the Sacramento area, also known as the Farm-to-Fork Capital of America. We have four farms within the area where American White Sturgeon are spawned and raised with meticulous care. The team puts in the time to ensure absolute quality and transparency. The sturgeon takes 7 to 10 years to reach full maturity, and only then can the roe harvest begin with the season lasting from January through June. Our caviar is packed fresh on our farm and sent by overnight delivery. Our farm-to-fork system eliminates the middleman. The Company maintains a good reputation in the culinary community because of its high-integrity and high-quality approach to caviar production. We do not cut corners or settle for second-rate. Our fish biologists can trace each product back to an individual sturgeon and we’re able to tell customers which tanks it swam in, what it was fed, when it was hatched, and who its parents were. That transparency is unmatched in the industry. We have taken steps to ensure the quality of our products and the integrity of the Company. The recent articles about caviar purveyors being outed for misrepresenting the origins (and hence the quality) of their products did not come as a surprise to us, and why we’re convinced more than ever that claims from any caviar company must always be always verifiable.
